Holiday baking with kids and a Cookie Exchange

Oh, the weather outside is frightful but the … scratch that! The weather outside is delightful; 80 degrees and sunny, in fact. The problem is… it’s almost Christmas and this gal could use some cooler temperatures.  Don’t get me wrong, I’m not wishing for 30 below or anything; just a little something to make holiday baking with kids and a Cookie Exchange a bit more festive!

Barb of The Everyday Home is hosting the 1st annual Christmas Cookie Exchange and we want to get our bake on!

So my littlest girls and I thought we’d better crank the A/C and rock out to the Christmas station on Pandora. {Oh that feels more festive already.} baking with kids 1

But, then again, you know how it goes when your baking with kids.

It’s all fun and games until…one of two things happen.

1. They loose interest or 2. they get a tummy ache from eating way too much cookie dough. :(

How I’ve found it best to bake especially during this hectic time of year is to get my little peeps all set up on one side of the island…baking with kidsto make their infamous reindeer cookies {and why yes, that is pre-made sugar cookie dough my friends.  that’s just how we roll around here sometimes} meanwhile…

You and I can get busy mixing up a batch of chocolaty treats for our cookie exchange today.

Chocolate Peppermint Snowball Cookies

Chocolate Peppermint Snowball Cookies

This cookie recipe was adapted from the recipe on the back of Andes Peppermint Crunch Baking Chips. Double Chocolate Peppermint Crunch Cookies. The instant coffee granules were omitted and Crisco baking sticks were used in place of unsalted butter.
  • 1 cup Crisco baking sticks
  • 2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup light brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1 pkg (10 oz.) Andres Peppermint Crunch Baking Chips
  • 1 – 4 oz. bar of semi sweet chocolate, chunked
  • 1/2 cup powered sugar
  1. Preheat oven to 350 degrees. In a microwave safe dish melt the Crisco baking sitck until it is completely dissolved.
  2. Sift together flour, cocoa, baking soda and salt in a bowl and set aside.
  3. Beat the butter, sugar, brown sugar and vanilla in a large bowl.
  4. Beat at medium speed wit an electric mixer until creamy.
  5. Beat in the eggs.
  6. Crunch baking chips and semi-sweet baking chocolate.
  7. Gradually beat in the flour mixture 1/3 at a time, beating on low speed just until blended and then fold in the Andes baking chips and chocolate chunks.
  8. Drop rounded tablespoonfuls of dough onto an cookie sheet lined with non-stick Reynolds wrap, approx 2 inches apart.
  9. Bake for 12 -15 minutes. Let rest on the cookie sheet for 5 minutes before sifting powered sugar on top of the cookies.

Start by measuring everything out and simply follow printable recipe above. It’s not complicated and these pics will give you an idea of the way it went down.

And, just about the time we’re all ready to enjoy one of the girl’s {almost} homemade Reindeer Cookies….

And, we’re all set for a sweet treat and a bit of Christmas cheer. Regardless of our summer-like temperatures outside.
